Chilaquiles (Tortilla Omelet)

6 tortillas
oil for frying
1 medium onion, diced
1 bell pepper, diced
2 diced tomatoes
2 Tablespoons salsa
12 eggs
salt and pepper to taste
1/2 cup cheddar cheese
1/2 cup sour cream

Cut or rip tortillas into small pieces into hot greased skillet. Move tortillas in skillet to prevent burning.
Fry onion, bell pepper for a few minutes. Stir in tomatoes and salsa.
Combine with fried tortilla pieces.
Mix eggs in mixing bowl and add salt & pepper.
Combine with tortilla mixture and cook, stirring occasionally.
Serve with cheddar cheese, a small spoonful of sour cream, and additional salsa.

Optional: add jalapeños and other Mexican spices as desired
