Skillet Chocolate Cake
1 cup flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 cup sugar
1/2 stick butter
1/4 cup vegetable oil
3 Tablespoon cocoa
1/2 cup water
1/4 cup buttermilk
1 egg
1 teaspoon vanilla
Whisk together flour, baking powder and salt. Combine with sugar and set aside.
In 10-inch cast iron skillet, bring butter, oil, cocoa and water to a boil. Remove from heat.
Whisk in dry ingredients, mix well.
Add buttermilk, egg and vanilla. Mix well.
Bake at 325 for 15-20 minutes or until only a few crumbs are on toothpick that has been inserted.
While cake starts to cool, make frosting.
Frosting:
1/4 cup butter
2 Tablespoon cocoa
4 Tablespoon milk
1/2 cup chopped pecans
2 cup powdered sugar
In medium saucepan, bring butter, cocoa and milk to a boil.
Remove from heat, add sugar and nuts.
Pour over center of warm cake and let it spread to edges.
