Justina Baza’s Fish Recipe
Country of origin: Mexico (indigenous recipe)
2 Tablespoons butter
½ onion
2 celery stalks
½ tsp. garlic powder red cayenne pepper
1 tomato
1 Tbl. hot salsa Pacific red snapper
Sauté onion and celery in butter. Stir in spices. Cook fish on top 15-20 minutes on low, covered. Serve with mixture spooned on top. Variation: Add any other fresh stir fry type vegetables.
