Peanut Cookies

1 cup shortening
2 cups firmly packed brown sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 /2 teaspoon salt
2 cups quick cooking oats, uncooked
1 cup crispy rice cereal
1 cup salted peanuts

Beat shortening at medium speed with an electric mixer until fluffy;gradually add sugar, beating well. Add eggs, and beat well. Combine flour, baking powder, baking soda, and salt; add to creamed mixture, mixing well. Stir in oats, cereal, and peanuts. (Dough will be stiff.) Drop dough by rounded teaspoonfuls onto lightly greased cookie sheets. Bake at 375 for 10 to 12 minutes. Remove cookies to wire racks to cool.

Yield: 7 dozen
