Michael’s Goodbye Gonzales Cookies
On the last day of school, knowing that we would be moving to Soulsbyville, trying to use up most of the staples in my cupboard, I came up with this recipe combination. We passed them out to students in his class, as well as the office, bus drivers, and librarians.
1 Cup peanut butter
2 Cups margarine
1 Cup brown sugar
½ Cup white sugar
6 eggs
2 Tbl. baking powder
4 teaspoons vanilla
2 Cups oatmeal
½ Cup walnuts
½ Cup coconut
12 oz each chocolate and butterscotch chips
4 cups whole wheat flour
Cream butters, sugar and eggs. Add remaining ingredients. Bake 10-12 minutes at 350 degrees. Makes a tremendous amount of cookies!
