JAMBALAYA

JAMBALAYA

2 cParboiled Rice (1)ups of uncooked rice. You don’t want it to get sticky, so you’ll want to get “Parboiled rice” (arroz vaporizado) to keep it separated.  Zataran’s is good. Uncle Bens Parboiled as well. (If you can’t find Parboiled, that’s fine, but the rice may clump together and be sticky which isn’t as good. It may help to fry the dry rice in a Tablespoon of oil before using, if it isn’t parboiled.)

Instead of the normal 2:1 ratio of water to rice, we want this to be a bit wetter than normal. So for the 2 cups of rice, we will use 4½ cups of water. The water should have 4 bouillon chicken cubes in it.

Meat:
1 pound sausage
1 pound of chopped ham
1 pound of shredded chicken

Take your pot, and you cook your sausage and ham until they are brown. Then you take them out of the pot. And you leave the grease in the pot, which isn’t much, (less if you use chicken sausage) and cook vegetables in that.

Veggies:
½ chopped onion
½ chopped green bell pepper
1 ribs of celery, chopped
1-2 teaspoons of Garlic (1 or 2 cloves)

If by some strange chance, and you go to put your veggies in, and there’s’ no oil leftover, add 1 or 2 tablespoons of butter. But you don’t need to, if there’s grease in there. Then once that’s cooked, add your meat back in. Add chicken in. (Cooked already). Add seasoning.

Seasoning:
½ teaspoon salt
½ teaspoon of black pepper
½ teaspoon of tabasco
