Pineapple Zucchini Jam

6- 8 cups gated zucchini – drain 30 min
1 cup crushed pineapple
1/2 cup lemon juice
4 cups sugar
Optional : 1 (6oz) raspberry gelatin.
Mix and simmer 30 minutes. Stir in gelatin after cooking other ingredients. Dissolve well.- process 10 minutes OR cook and refrigerate or freeze. Can use any flavor gelatin
