Butterscotch Cream Cheese Bars
I began a cooking group as one of the Relief Society Interest Groups. RS Interest groups were discontinued, so I just continued meeting on my own with friends. This recipe is from the kitchen of Patrice Ringger, who shared it at my 2010 Cookie Exchange
1 12 oz. pkg. butterscotch chips
3/4 stick butter
2 cups graham cracker crumbs
2 cups walnuts
Microwave chips and butter for 4 min. on medium power
Stir in cracker crumbs and nuts. Take out 2 c. mixture and set aside. Press
remaining mixture into a 15×10 brownie pan. Bake 12 min. at 350 degrees.
Filling:
2 8 oz. pkg. cream cheese
4 eggs
2 Tbsp. lemon juice
1/2 c. sugar
1/4 c. flour
Beat cream cheese and sugar until creamy, add lemon juice, then eggs one at a
time. Add flour. Pour cream cheese mixture over hot crust. Cover with
remaining crumb mixture. Bake 20-25 min. Cool completely. Chill.
