Belgian Waffles

Belgian Waffles

Ingredients

2 ¼ cups all purpose flour
1 Tablespoon Baking Powder
3 Tablespoons Sugar
½ Teaspoon Salt
1 teaspoon Cinnamon
2 Large Eggs Separated
½ cup Vegetable Oil
2 cups Milk
1 Teaspoon Vanilla Extract

Instructions

  1. Preheat waffle iron, spray with non-stick cooking spray
  2. In large bowl, whisk together dry ingredients: flour, baking powder, sugar, salt and cinnamon
  3. In a medium bowl, beat egg whites until stiff peaks from (you know they are stiff peaks if you lift the whisk and a nice peak remains instead of flopping over
  4. In a separate medium bowl, mix the egg yolks, vegetable oil, milk and vanilla extract
  5. Add the wet ingredients from egg yolk mixture to the dry ingredients and mix well
  6. Fold in the egg whites
  7. Pour batter onto the hot waffle iron and cook til you get the yummies
  8. Serve immediately with whatever your heart desires, I like whipped cream + any fresh fruit + fruit syrup
