FISH by Justina Baza

A recipe that she shared with me when we lived in Gonzales

2 Tablespoons butter
(or fry 2 pieces of bacon, cut in small pieces, and do not drain the grease it creates)
1 onion, cut in rings
2 celery stalks, diced
1 bell pepper, sliced
1 zucchini, sliced into small pieces
1 tsp. garlic powder
1/2 tsp. salt
red cayenne pepper
1 tomato
1 Tablespoon hot salsa
Pacific red snapper

 Sauté onion, celery, bell pepper, and zucchini in butter (or in bacon grease with bacon pieces). Stir in spices.
Cook fish on top 15-20 minutes on low, covered. Serve with mixture spooned on top.
If you want to use the oven, pour some of the bacon grease on the bottom of an aluminum foil lined cookie sheet.
Lay pieces of fish on the bottom and cover with the sautéed vegetables.
Bake at 375 for 15-20 minutes.
