Amy Baldauf’s TACO SOUP
Here’s my mom’s taco soup recipe…it’s so yummy & perfect for those cold days!
TACO SOUP
1 lb. ground beef
28 oz. can crushed or diced tomatoes
1 8oz. can tomato sauce
1 can corn (including liquid)
1 can black beans (including liquid)
1 envelope taco seasoning
Brown the meat and add the envelope of taco seasoning like you do when you are making tacos. Then just pour all the ingredients into the crockpot or stew pot and heat. Serve with Fritos or corn chips, sour cream, olives, and grated cheese. You can add water, but I don’t. Tastes even better the second day.
When I made it this last week I didn’t have plain diced tomatoes, so I put a can of “lime & cilantro” diced tomatoes and another can of “roasted garlic” tomatoes. The flavor was divine! Hope you enjoy it!
