AMELIA’S CHOCOLATE CHEESECAKE

2 eggs

1/2 Cup dark brown sugar

1 teaspoon vanilla

¾ Cup sour cream

2 Tablespoons butter

1/8 Cup cocoa powder

3/4 Cup chocolate chips, melted

8 oz. cream cheese

COOKIE CRUST:
24 crushed chocolate cookies
6 Tablespoons melted butter

GARNISH:
½ Cup chocolate chips, melted
2 Tablespoons oil

 

COOKIE CRUST: combine crushed cookies and melted butter in pie tin. Press with fork onto bottom and sides of 9-inch pie tin.

CHEESECAKE FILLING:  Blend in blender: egg, sugar, vanilla, sour cream. Keep the blender running and add melted butter, cocoa powder and melted chocolate chips. Cut up pieces of the cream cheese, blending gradually until smooth. Pour into 9-inch cookie crust and bake at 325 for 35 minutes. Refrigerate 2 hours; garnish with the additional melted chocolate chips combined with oil. Chill all day. May alternatively garnish each slice with chocolate syrup just before serving.
