Larry Sewell’s Enchiladas
We had dinner at the Sewell’s and he served us the prettiest and most delicious enchiladas I’ve ever had! I’m excited to try these myself.
6” or 8” tortillas
1 pound hamburger
1 can refried beans
1 jar salsa (I like La Victoria)
1 large can enchilada sauce
Peppers (a colorful assortment)
Chopped red onion
Diced olives
Diced green chilis
Shredded cheese (I use cheddar)
Cook hamburger, drain. Mix with refried beans and salsa.
Add chopped peppers, onion, olives, chilis, and cheese – to your flavoring.
Put a serving spoonful of the mix inside a tortilla and roll up. Continue until a 9×13 pan is filled. Pour enchilada sauce over the top and sprinkle more cheese on top.
Bake @ 325 for 20-25 minutes.
Garnish with more olives, peppers, onions, and chilis on top after taking pan out of oven.
