CREAMY CARNE ASADA CHICKEN
4 large chicken breasts
Cooking oil for frying
1 Tablespoon garlic powder
1 Tablespoon Carne Asada seasoning mix
Dash of ground red pepper
3 zucchini, chopped into circles
1 purple onion, sliced into rings
1 lb. sliced mushrooms
1 (10.5 oz) can condensed cream of mushroom soup
Cut chicken into large serving pieces. Brown chicken in oil. Sprinkle with garlic powder, carne asada seasoning and ground red pepper. Fry for another 20 minutes. Place in hot (set on high) crockpot and cover with zucchini slices. Place lid on crockpot.
Sauté onions and mushrooms in the chicken drippings until soft, about 10 minutes. Place over zucchini and chicken. Let cook for 3 hours.
Just before serving, drain water from crockpot. Stir in mushroom soup and serve over rice.
