AUNT SUSIE’S PRETZEL JELLO SALAD

AUNT SUSIE’S PRETZEL JELLO SALAD

(Long story, but had to include it)
2 Cups crushed pretzels
¾ Cup butter, melted
3 Tablespoons sugar
8 oz cream cheese
1 Cup sugar
8 oz Cool Whip
2 (3oz) red jellos
2 Cups boiling water
2 (10oz) frozen strawberries
Pour Jell-O’s in a pot with boiling water and stir until completely dissolved. Remove from heat and allow to cool.
Meanwhile, crush pretzels into small bite-sized pieces. Melt butter in saucepan. Stir in pretzel pieces until covered in butter. Then sprinkle with sugar and toss pretzels until evenly covered.  Spread the pretzels out evenly on a waxed paper-lined cookie sheet. Bake for 20 minutes at 350 degrees.
Remove from oven and carefully loosen all the pieces and then set aside to cool completely.
Grease a 9×13 inch glass casserole dish.
Whip cream cheese and sugar until softened like frosting. Blend in Cool Whip by hand.
Check if the pretzel pieces are cooled; if they are, place in the bottom of the greased casserole dish.
Drop the cream cheese mixture by spoonful over different areas of the cooled pretzels. Carefully spread the mixture, covering the loose pretzels to the edges of the casserole dish. Place in refrigerator to solidify.
Stir the Jell-O that has been cooling in the pot to assure it has all dissolved. Mix in frozen strawberries (still frozen). Stir until it sets and spread over mixture. Chill until set.
Option: Instead of strawberries, stir in crushed pineapple (20 oz can – including juice) and whole berry cranberry sauce (14 oz can) into the Jell-O in the pot. Place the pot in the refrigerator for about 30 minutes. The idea is to allow it to set slightly before spreading over the cream cheese mixture. Once you have poured the Jell-O over the cream cheese mixture, chill until completely set.
